Fried Laksa Rice and Yong Tau Foo Soup

My first attempt at this strange dish!I remember when I was preggers with Caleb,I always had craving for Auntie Jenny's laksa from my school canteen's stall No.4.I could eat it everyday!But I couldn't stand the sight of it when i had Ian,anyway when i had him,whatever i ate came out in merlion style within 5 minutes..:p

The difficult part of this rice is the broth used to cook the rice;you will need:
lemongrass
laksa leaves
coconut milk
sugar
salt
pepper
shrimp
chilli
vegetable oil
soya sauce
garlic
onion
ginger

Cook the above together and set aside

Stir fry shallot and garlic
put in 500g of cooked rice and 2 beaten eggs
cook until rice is golden and separate (rice separate from one another...forgive my language)
put in the broth
for greater taste,add in prawn,fried fish cake and fried toufu(tau pok)
This time i added fried fish cake,crab meat(surimi kanami) and tau pok

Maybe Caleb will like it since i took so much laksa when he was in my womb!:)
