Beef Kway Teow

I made this dish following the recipe from Mrs Leong Yee Soo's HeartyMeals.:)

Ingredients:
Water 4 cups
Beef ribs 4 pieces
Beef shin
Flat rice noodles(kway teow)
Bean sprouts 100g
Bovril 1/2 tablespoon
Salted Chinese Mustard 2pieces thinly sliced
Chinese Celery 3 sprigs,chopped

Seasoning
Salt
Dark Soy sauce
Peppercorns
Cloves
Galangal
Palm sugar
(i din write the measurement cos i did it in 'agaration'..sorry:p)

Bring water to a boil in a saucepan.Add in beef shin and ribs and seasoning and let it boil rapidly for 20 minutes.
Reduce heat and simmer until meat is tender
Add Bovril to taste
Remove meat from the soup and but into small pieces.Set aside.Keep soup at simmer.
To serve:scald noodles in boiling water for a moment and drain.Place a small handful of bean sprouts and noodles in individual serving bowls and add some meat.Pour over with boiling soup and garnish with sated chinese mustard and chinese celery
Serve hot with chili sauce and pounded galangal
