Orange Tang-y Cake

After receiving immense encouragement from a p-blogger,Bron,and her recipe as well,i decided to make an orange cake.Made this in the wee hours of Wednesday morn,as usual,after the kids had slept.

Wanted to use up whatever ingredients i have on hand,so i modified Bron's recipe.But thanks Bron babe,this cake is for you,Sam and Emma!

Btw,my dear Husband named this cake,a bit cheesy,but oh well,Tang is his surname,so Orange Tangy cake,pun intended:)

I like the garnish a lot,it actually came about from a failed attempt to cut a whole thin slice of orange.Then i fiddled with the broken slice and i got this. Was trying to make it into a rose. Nice?:)

What i used:
175g Light Muscavado Sugar
Squeezed juice of 2 Sunkist Oranges
3 tablespoons of marmalade
175g self raising flour
2 eggs,beaten
3 tablespoons sunflower oil
55ml milk
100g almonds,chopped

Baking Time:
50-60 minutes

Method:
1) Grease a 220cm round cake tin
2) Preheat oven to Gas Mark4/180 degree celcius/350 farenheit
3) In a mixing bowl mash marmalade with the sugar until smooth
4) Stir in the orange juice,flour, eggs, oil and milk, mixing well until everything is thoroughly combined.
5) Gently stir in the chopped almonds.
6) Pour into the tin and cook 50-60 minutes until cooked through
7) Test by inserting a skewer into the centre of the cake-if it comes out clean with no mixture clinging to it, the cake is cooked.
8) Remove from oven and cool in the tin for 5 minutes
9) Turn out onto a wire rack and leave until cold

Tada!

And today is National Day,so with our 'newborn',Orange Tang,we wish Singapore happy 42nd birthday!:)

mmmmm...that is super-yummy!! :) you've really done a fantastic job, tyan, and a fabulous pic as well (yep, that is a real pretty orange flower to go with it too :) ), wow. i must definitely try this out when i get the opportunity to, but i doubt it'll turn out half as nice as yours! *-)

In fact i wasnt sure whether it will turn out ok because i actually used a recipe for chocolate banana cake,i just substituted the banana and the chocolate with marmalade and orange juice.Looked ery watery and i wasnt sure if it would work out. Was keeping my fingers crossed!
