Becky's Organic Chocolate cake

Posted by tyan (Singapore, Singapore) on 4 September 2007 in Food & Cuisine.

A p/blogger who has become a dear friend,Rebecca, made this chocolate cake for her beautiful daughter, Elise and shared the recipe with me. You can go to this post to see how adorable Elise is as she 'plunges' into the cake.

So i decided to call this cake,'Becky's Organic chocolate Cake',(Rebecca,i hope you dont mind me using Becky, sounds more endearing for a cake, lol)

Here is her recipe:
Basic cake ingredients :
- 125g organic self-raising flour
- 2 large organic eggs
- 125g organic butter
- 125g organic demerera sugar
- 30g organic raisins
Cream together butter and sugar. Beat in the eggs. Add half of chocolate sauce (see below) and flour, whisk all together. Add raisins into the mix for extra fun. :)
Bake in centre of preheated oven at 180degC for approx. 30 minutes. then, voila! :)

Chocolate sauce :
- 30g organic cocoa powder (i use green & black's, but guess any reputable brand should do)
- 150ml organic chocolate milk/chocolate soy milk
- 3 teaspoons organic demerera sugar
Stir together in saucepan over low fire until all cocoa dissolved, then pour half into cake mixture, and save the other half as chocolate sauce to drizzle over the finished cake :)

I followed her recipe and made this chocolate cake, and Rebecca,Caleb loves it! And hub brought half of it to treat the colleagues sitting around him.:)

Very nice, tyan. But it's hard to be on a diet (Mrs. VF and I are doing South Beach) and see this delicious looking piece of cake up close. I'm glad the teddy bear and blocks are in the picture as a way to concentrate on something else.

@rainsocks: thanks rainsocks for noticing![as in noticing that i actually have so many things to do,lol...:)] i did this in the middle of the night, after the kids are asleep.Actually its kinda therapeutic...doing sth that has NOTHING to do with the kids...:)

Rebecca from Leicester, United Kingdom

Wow, thank you so much, tyan for featuring my little recipe on your post today! You are ever so sweet, dear friend. :) I must say, the cake looks even YUMMIER in your photo here than in mine. I'm licking my lips already. :P :o) ...
And ohhhhhh, gorgeous teddy in this pic definitely takes the cake, here, imo! :-) Such a perfect touch to an already superb photo! You are a real natural at creating wonderful and adorable shots, babe! Seriously, I like your pics even better than Anne Geddes. :)

@Rebecca: thanks so much for your wonderful words of encouragement Becky! Actually,i did this 3 times! And the best was the 3rd one..i did the 2nd one for my students when they came last week and it turned out in crumbles.Realised it was because i did not mix the ingredients according to sequence, then it dawned upon me how impt it was to follow instructions to the tee!lol..thanks for giving me such great honour...i love anne geddes' photos since young!

ps the bear was a 'door gift' last year on Christmas, somebody works in OCBC and got so many such cute bears...they were giving them out to kids before the service..this kind lady saw Caleb sitting on my swelling tummy(i was carrying him) and came over and gave me one!lol.

btw bear's name is George!

Rabbit from Richmond, United States

i feel like i'm a little girl having a tea party and i put cake out infront of my teddy bear to make believe he's going to eat it. If only that worked in real life for when we are on diets. I guess thats when we need to have make believe cake... ha ha

4 Sep 2007 3:42pm

@Rabbit: haha..maybe somebody should invent and patent a slimming cake...fat free so to speak with the added function of helping a person to slim down..put laxatives in?lol

Markus from Reading, United Kingdom
