Banana Bread

Sometimes Caleb asks me to bake for him. He learnt the word 面包(meaning bread)in school and asked if i could bake bread for him.I found a really easy one in a children's recipe book and we baked together. The wonderful thing about baking instead of buying is that he always finishes what we baked together.

300g plain flour
100g granulated sugar
3/4 tsp bicarbonate of soda
1/2 tsp salt
3 very ripe bananas,mashed with a fork
100g plain yogurt
2 large eggs,beaten lightly
90g butter,melted and cooled
1 tsp vanilla essence

1) Grease anf flour the bottom of a loaf tin,then preheat oven to 180 deg c(i used 160 deg c)

2) Next sift the flour,sugar,bicarbonate of soda and salt in a large bowl and set aside.

3) In another bowl, mix the mashed bananas, yogurt, beaten eggs, butter and vanilla essence with a wooden spoon.

4) Once these ingredients have been combined, they need to be folded into the dry ingredients with a spatula. Adult supervision is required here as over-mixing will prevent the bread from rising as it should.

5) Once you have a thick chunky batter, scrape it into prepared loaf tin and bake for about 55 minutes (i used 45 minutes)
